Meal Emergancy


Help!
Hubs' job has him in and out of port.
I'm making a meal plan for the next couple of weeks and my brain always goes blank for the nights it's just me and the kiddos.
I need some ideas.
What are your favorite "hubs-is-gone-must-feed-the-children-something-easy-and-healthy" meals?

  1. Refried beans, either on tortillas or cut the tortillas in wedges and toast them in the toaster. Add in your favorite salsa, cheese, avocado etc and enjoy. Super simple, also healthy and best of all very little mess.

    Or make an omelet -- we like mushrooms with a bit of red onion and cheese.

    Or pasta with a bit of olive oil and some fresh grated Parmesan on top -- think of it as a variation on mac & cheese.

  2. I usually make the recipes that I like, but Jedd doesn't love...like spaghetti. :) Also, I find that I can cook a couple of times and it lasts forever! I also use that time to take a break from cooking and give them carrots and hummus or peanut butter bananas, etc. and I enjoy a salad. :) Oh, and breakfast for dinner! :)
